Delicious and Gut-healthy dinner: Quinoa Stuffed Bell Peppers

Ingredients:

– 4 bell peppers (any color)

– 1 cup cooked quinoa

1 can black beans, rinsed and drained

– 1 cup cooked corn kernels – 1 small red onion, diced

– 2 cloves garlic, minced

– 1 teaspoon cumin

– 1 teaspoon paprika

– 1/2 teaspoon chili powder – Salt and pepper to taste

– 1/2 cup shredded cheddar cheese (optional)

– Fresh cilantro, for garnish

Instructions:
  1. Preheat the oven to 375°F (190°C) and line a baking dish with parchment paper.
  2. Cut the tops off the bell peppers and remove the seeds and membranes. Place them in the prepared baking dish.
  3. In a large bowl, combine the cooked quinoa, black beans, corn, diced red onion, minced garlic, cumin, paprika, chili powder, salt, and pepper. Mix well.
  4. Spoon the quinoa mixture into the bell peppers, packing it tightly.
  5. If desired, sprinkle shredded cheddar cheese over the stuffed peppers.
  6. Cover the baking dish with foil and bake for 25-30 minutes, or until the peppers are tender and the filling is heated through.
  7. Remove from the oven and garnish with fresh cilantro.
  8. Serve hot and enjoy your gut-healthy dinner!
