Delicious and Gut-healthy dinner: Quinoa Stuffed Bell Peppers
Ingredients:
– 4 bell peppers (any color)
– 1 cup cooked quinoa
– 1 can black beans, rinsed and drained
– 1 cup cooked corn kernels – 1 small red onion, diced
– 2 cloves garlic, minced
– 1 teaspoon cumin
– 1 teaspoon paprika
– 1/2 teaspoon chili powder – Salt and pepper to taste
– 1/2 cup shredded cheddar cheese (optional)
– Fresh cilantro, for garnish
Instructions:
- Preheat the oven to 375°F (190°C) and line a baking dish with parchment paper.
- Cut the tops off the bell peppers and remove the seeds and membranes. Place them in the prepared baking dish.
- In a large bowl, combine the cooked quinoa, black beans, corn, diced red onion, minced garlic, cumin, paprika, chili powder, salt, and pepper. Mix well.
- Spoon the quinoa mixture into the bell peppers, packing it tightly.
- If desired, sprinkle shredded cheddar cheese over the stuffed peppers.
- Cover the baking dish with foil and bake for 25-30 minutes, or until the peppers are tender and the filling is heated through.
- Remove from the oven and garnish with fresh cilantro.
- Serve hot and enjoy your gut-healthy dinner!
